Veldhuizen Cheese Stands Alone

The Veldhuizen Family Farm is not your typical agricultural venture.

Its herd of about 45 cows don’t compete with the large commercial dairies here in Erath County, the No. 1 dairy-producing county in Texas.

But owners Stuart and Connie Veldhuizen have found a growing market for their products that they say is much more rewarding than commercial dairying.

Say cheese.

To be more exact, say raw-milk cheese.

Stuart and Connie have been making artisan cheeses since 2002 from raw milk from their small herd of free-range cows.

“With commercial agriculture you produce as much as you can as cheap as you can. There’s no creativity to it.” Stuart said. “With cheese making you can try different things and see what people like.”

The Minnesota native comes from a line of dairymen. During one typical Minnesotan winter he read a magazine article about a Texas dairy, complete with photos of cows grazing in the winter.
