It's been a busy month for our Taster's Choice Hall of Fame gatekeepers. Last week, the doors opened for Boudin's sourdough bread, and this week brings two more entrants into the Hall.
Two Genoa salamis – a perfect pairing with sourdough, we should note – were a hit with our panelists. They sampled both cured and uncured versions that came sliced in packages, and it was the first and last salamis they tasted that were Hall of Fame-worthy.
Our winner, once again, was a local. Columbus ($5.99 for 4 ounces at Andronico's) took top honors for its "rugged" slices that had a "nice blend of fat to meat" and a "chewy, not dried" texture. Meanwhile, "bits of pepper" and "overtones of wine" made for a "nice curing flavor" with a "good dose of spice." Four would buy this brand and one might.
