The Ultimate Vermont Combo: Beer-Washed Cheese

MORRISVILLE – The cows that graze in a long, high field here look east to their milking barn. It is down the road and one town over in Elmore.

Looking west from the field presents a grander view — though one without hay or grain, or farmer Debora Wickart. She knows her cows by name; they recognize her arrival by the rumble of her truck.

In the west rises Mount Mansfield, the peak whose flanks are marked with ski trails and a lift that have names including Inspiration, Forerunner and Chin Clip. These are also the names of cheeses made from the cows' milk.

A further connection exists between mountain and cows: The farmer and her husband — who makes the cheese — met at the Matterhorn, a bar on the Mountain Road in Stowe.
