Americans are looking for more local foods with unique ingredients and flavors, and that has contributed to a rise of cheesemakers in the region, said Robert McGorrin, who heads up the Department of Food Science & Technology at Oregon State University.
“I think people are looking for new experiences and something that is out of the ordinary,” McGorrin said. And that can include even a slice of gourmet cheese on a burger.
Nancy Chandler, owner of Alsea Acre Goat Cheese in rural Benton County, said that Willamette Valley residents in particular have adventurous palettes.
