For years, Kathy and Bruce Workman dreamed of opening a cheese store, one that would showcase all of their cheeses from Emmenthaler Swiss to award-winning gouda.
Unfortunately, Edelweiss Creamery, located on a country road southeast of Monroe, proved inhospitable to a retail operation. They simply didn’t have enough space.
So the Workmans took the next logical step: They bought a small house on the main street running through Verona, stripped the interior down to bare wood and pipes, and transformed it into a gleaming showcase for Wisconsin cheese.
“It was important to us to have a place where we could sell our own cheese,” said Kathy Workman, sitting next to the deli at Edelweiss Cheese Shop. “No one carried the range — certainly not all that my husband (a master cheesemaker) makes. He makes 23 varieties.”
