Artisan farmers craft Parmigiano Reggiano in the provinces of Parma, Reggio Emilia Romagna, and Modena in their entirety, and in portions of the provinces of Bologna, and Mantova, Italy. Known as “The King of Cheeses,” Parmesan is aged for an average of 24 months and must pass several strict standards in order for the cheese to be stamped with the official Parmigiano Reggiano certification mark.
