This summer, Texas enacted stricter food standards that required food makers including Dallas-based Mozzarella Co. to conduct more stringent ingredient testing, said founder Paula Lambert.
"We follow every single guideline," said Lambert, whose 28-year-old business has 18 employees.
"So I don't really know what's so different about the federal law than what we're already doing. We think we're already in compliance."
