Milwaukee Salami Maker Bolzano Closing Down After License Suspended

Bolzano Artisan Meats, a small producer of high-end salami that had its food-processing license suspended by the state in late April, is closing its doors.

Co-owner Scott Buer has taken a job in the meat department at Outpost Natural Foods in Mequon. His wife and co-owner, Christin, will remain for a time at the Bolzano plant to handle legal and regulatory matters. But production at the facility, 3950 N. Holton St., will not resume, Scott Buer said Thursday.

"We really never will be making more product here," he said. "We really can't."

He said he has been talking with owners of two other Wisconsin food processors about the possibility of using their equipment to produce Bolzano meats, much like some small craft brewers make their beer at larger breweries. That prospect, however, remains uncertain at the moment.
