I love it when an unfamiliar cheese compels me to drag out the atlas.
Remember atlases? I could Google "Bodensee" to find out where it is and why a cheese is named for it, but it's more fun to get out the big book, flip to the Switzerland page, and locate the sizable blue splotch on the border between Switzerland and Germany. That's Lake Constance – Bodensee to German speakers. It's going on my bucket list.
Bodensee Butterkäse comes from the Studer creamery, which also makes the fabulous washed-rind Scharfe Maxx.
