Manchego is the most famous Spanish cheese.
It is a sheep’s milk cheese and is aged from two months to two years.
It is a mild firm cheese, nutty and dry; the rind is usually beige or black. The wheels are 4 to 5 inches thick, 8 to 9 inches in diameter and weighs 6 to 7 pounds.
Manchego is almost always served in small triangular pieces. In Spain it is often served as a tapas, alone or with olives and is also served as a dessert with fruit and honey. Another good option is to serve it with Spanish chocolate covered almonds.
