If you're belt-tightening now to atone for December's budget busting, keep an eye out for Jeffs' Select Gouda. At about $15 per pound, this new American cow's milk wheel delivers a lot of personality for the price.
A collaboration between two cheese makers – both named Jeff – the Gouda was not initially a commercial venture.
The two Jeffs, who met at a trade show and became fast friends, wanted to put their talents together, but reside in different states. Jeff Wideman works in Wisconsin, making mostly cheddar for Maple Leaf Cheese. Jeff Jirik works with Caves of Faribault, a Minnesota blue-cheese producer.
