Grilled Halloumi Cheese Wont Melt

Grilled cheese is all the rage. No, not grilled cheese as you know it. Rather, Greek-style halloumi cheese that actually can be grilled or pan-fried.

Halloumi is similar to fresh mozzarella, but what makes this semi-firm Mediterranean cheese unique is that it can withstand high heat without melting into a puddle of gooeyness. As it cooks, halloumi warms and softens but retains its shape while developing a rich golden crust.

It is wonderful grilled — place it right on the grill grates — but I like it even better pan-fried because the entire surface browns.

Its flavor is mildly salty with a delicate buttery taste. There are plenty of uses: Cut it in chunks and sprinkle it on a salad, or slice it thin and use it to make a traditional grilled cheese sandwich.
