Grafton, Vt. — Grafton Village Cheese, a business of the nonprofit Windham Foundation in Grafton, Vt, announces the introduction of Smoked Chili Cheddar, an aged smoked cheddar cheese that includes three types of chili peppers. Smoked Chili Cheddar joins the company's signature Grafton Village line of aged and flavored cheddars.
Like all of Grafton's cheddar, the new Smoked Chili Cheddar is handmade using premium milk from Vermont family farms. It includes habañero, jalapeño and pasilla peppers, a combination that imparts a spicy heat from the habañero and jalapeño peppers, and a smoky, rich flavor from the pasilla. The cheese is then aged for a minimum of 90 days and smoked using maple wood chips. The finished product is geared for fans of truly spicy cheese.
Grafton's Smoked Chili Cheddar is an ideal accompaniment for Mexican foods, burgers, sandwiches and other cooking applications. It is nicely paired with Pilsner and Belgian style beer, hard cider, Sauvignon Blanc and sparkling Rose wines.
"We have been playing with chili peppers for quite a while to find an ideal recipe," said Dane Huebner, Grafton's Cheese Artisan. "There are many mild pepper cheddars out there, but the combination of smoke and heat results in something really flavorful and spicy for those looking for a cheddar with a true kick."
The product has been available locally in limited quantities for the past year. Grafton's Smoked Chili Cheddar is available in one pound, 8 oz and 5 lb blocks.
