FDA Apologizes For Cheese Confusion

An FDA official has sent a letter to Rep. Peter Welch, D-Vt., apologizing for "confusion" involving food safety regulations as they apply to cheesemaking.

The confusion surrounded the use of wooden shelves to age cheese, and whether this long-standing practice was permissible or subject to prohibition.

The June 26 letter to Welch written by Michael R. Taylor, deputy commissioner for foods and veterinary medicine, states in part:
