Epoisses' Spreadable Softness Will Blow Your Mind

This is an urgent cheese of the week.

I try to keep a pretty close eye on the Sam’s Club cheese case, because you never know what international goodies are going to pop up for a one-time run. When I recently peeked in, I was greeted by a row of little wooden boxes printed with one of the most revered names in the cheese world — Epoisses de Bourgogne.

Steven Jenkins, in his Cheese Primer, refers to Epoisses as one of the great Burgundian cheeses, and one of his favorites in the world.

Igourmet, a gourmet website famous for cheese, refers to it as a gastronomic masterpiece.
