BLOCKVILLE – Production for Empire Specialty Cheese Co. is inching closer at its Blockville plant, pending final inspection by New York’s Dairy Services.
According to Gerard Matteis, president of Empire Specialty Cheese Co., the New Jersey-based company is targeting official production between late August and early September. A final inspection of the plant, located on Fairbanks Road in Blockville, is slated for the middle of August, according to Matteis.
“We’re keeping our fingers crossed that the inspection will occur during the week of August 17,” Matteis said, adding August 24 could be the date in which production begins. “It could be delayed a week or so beyond that. Inspectors come to the plant every week to check on our progress.”
