PERRY — Cheesemaking is surprisingly delicate.
Any number of factors needs to be just right, as Gary Burley explained Monday. Milk quality, air temperature and even relative humidity play a role in creating a suitable wheel of cheese for sale.
Gary and his wife Betty recently celebrated the opening of their new store at East Hill Creamery on Route 39. It’s the latest step that’s seeing them rekindle an industry which otherwise dried up about 80 years ago in Wyoming County.
The store is part of their brand-new, 18,000 square-foot facility.
