Rotisserie chicken: How did we ever live without it?
The ideal convenience food lets you start with fresh, hot protein that’s a blank canvas for creating anything from chicken soup to nachos — and in short order. Southern Living recently published Rotisserie Chicken Cookbook (Oxmoor House, $14.95), which suggests that rotisserie chickens have become kitchen essentials for the busy cook.
But are all rotisserie chickens created equal? We decided to find out, sampling birds from a variety of local supermarkets. From these, we culled the field to the best nine.
With few exceptions, they’re all pretty darned good, although many are dogged by the perennial poultry issues of dryness and the challenge of getting the breast and dark meat succulence to balance. Just like a Thanksgiving turkey, the white meat tends to get done before the dark.
