Rich Rogers, owner of Dallas-based cheese shop Scardello Artisan Cheese, has earned the official title of certified cheese professional.
And Rogers isn’t alone. Ali Morgan, Scardello’s wholesale manager, also received the certification.
The cheesemongers had to pass the Certified Cheese Professional Exam administered by the American Cheese Society to earn the title. The three-hour exam tests cheese knowledge and best service practices and evaluates the core competencies of cheese industry jobs including retailers, cheesemongers, cheesemakers, distributors, importers, exporters, restaurateurs, educators and food writers.
To qualify for the test, candidates had to have documented 4,000 hours of work experience in the cheese profession during the past six years or 2,000 hours of work experience and 2,000 hours of continuing education, formal education or professional development.
