Waterloo, Wisconsin — Crave Brothers Petit Frère European-style cheese from Wisconsin is featured among the 2011 Taste Test Award winners in the October issue of Cooking Light magazine. For its Second Annual Taste Test Awards, Cooking Light sought out the best-of-the-best from small-production food artisans around the country. Petit Frère is a featured cheese in the Artisanal Category.
One of the award-winning cheeses from Crave Brothers Farmstead Classics, Petit Frère is made with milk from the Crave Brothers Dairy Farm. It is produced at the farmstead cheese factory on a sustainable, state-of-the-art family farm. Petit Frère (“little brother” in French) is the smaller, eight-ounce version of Crave Brothers Les Frères rind-washed cheese sold in two-pound wheels. Petit Frère offers an earthy, fruity flavor and is sold in a wooden box.
Here’s what the Cooking Light taste-testers had to say about Petit Frère. “A subtle washed-rind cow’s milk cheese that quietly announces its presence with a hint of musty barnyard funk on the palate, not the nose. Smooth texture with a slightly bitter rind and a silky center.”
In producing their family of award-winning artisan cheeses, the Crave Brothers use 100% green power, and practice water conservation and recycling. As a carbon- negative company, they produce more power with their bio digester than they use for their dairy and cheese plant. Crave Brothers Farmstead Classics encourage consumers to join them in the quest for sustainability by reusing and recycling the cheese packaging.

From the manure digester to water recovery, sustainability is top-of-mind on the farm. Every pound of cheese made by George Crave, a licensed cheese maker, is made with milk from the family’s herd. Crave Brothers Farmstead Cheese produces Mascarpone, Fresh Mozzarella, Les Frères® and Petit Frère® French-style cheeses, Farmer’s Rope® Part-Skim Mozzarella String Cheese and Oaxaca.
