Maryland Crab Cakes
1 lb. Crabmeat, picked over to remove shell
1 cup fresh, cubed white bread
1 egg
Tabasco Sauce to taste
1 tsp. Old Bay Seasoning
½ diced red bell pepper, sautéed in olive oil
3 T. celery, finely diced
1T. Worcestershire sauce
1 tsp. Colman’s Dry Mustard
2 T. fresh lemon juice
2 tsp. Colman’s Prepared Mustard
2 T. chopped parlsley
1 T. chopped dill
1 T. minced shallot
Blend all ingredients except for crabmeat and bread crumbs. Blend in crabmeat and bread crumbs gently until incorporated. Do not over-mix. Chill for one hour. Form into 8 3”x3” patties and sauté in olive oil until golden brown. Serve with tartar sauce.
Homemade Tartar Sauce
1 cup mayonnaise
1 T or more to taste Colman’s Mustard
¼ cup diced onion
1 T. fresh lemon juice
1 tsp. chopped parsley
1 tsp. capers
2 T. chopped sweet pickle
Salt/white pepper to taste
Combine all ingredients and mix well.
