At Traders Point Creamery and The Loft Restaurant in Zionsville, just outside Indianapolis, the motto is "nourishing the land that nourishes us all."
The 320-acre farm, dairy, and restaurant is owned by Dr. Peter "Fritz" Kunz and his wife, Jane Elder-Kunz.
"The vision that started it all is when the Kunzes inherited this far land," explained Gail Alden, director of marketing and events for the farm. "Fritz's Grandmother said she wished they wouldn't break up the land and sell it, so they wanted to keep the farm together. They wanted to open an organic dairy farm. They started the process in 1997, and sold the first bottle of milk in 2003."
Many of the dairy's practices are revolutionary. The cows are raised organically and are 100 percent grass-fed. The milk is minimally processed, so although it is gently pasteurized, it is not homogenized, and the cream will separate upon sitting. All products, even the single serve yogurts, are sold in glass jars.
