Cheese Of The Week: Stripy Jack

Stripy Jack, or Five English County Cheese, made by Singleton's Dairy in England, is a fun and approachable cheese with an interesting look.

I assume the cheese is named after the Union Jack, or the flag of the United Kingdom; I couldn't find confirmation of this, but it certainly has nothing to do with Monterey Jack cheese.

There are many versions of Five Counties Cheese in England, depending upon brand. They all involve thin layers of five variously colored local cheeses stacked atop one another and pressed into a solid wheel.

The Singleton's brand includes Lancashire, Cheshire, white cheddar, Double Gloucester, and Red Leicester. All, in true English style, are firm, tangy, cooked-curd cheeses with character similar to a mild cheddar.
