Cheese Of The Week Is Parrano Cheese

Parrano cheese advertises itself as the Dutch cheese that thinks it's Italian. That is, really, a very good description.

This modern cheese was invented in the Netherlands to embody the best qualities of both the local Gouda and Italian Parmigiano Reggiano cheeses. Made of pasteurized cow's milk and aged for five months, it has the flavor of a true Parmigiano, exhibiting the intensity, nuttiness, sweetness and slightly crystalline texture found in Parmigiano and other Italian Grana cheeses, which practically are never found in "parmesan" imitators.

In overall texture, Parrano stays closer to its Gouda roots; it is softer and creamier than a Parmigiano, just firm enough to grate without squishing or being crumbly. It is not at all waxy, shiny or plastic.
