Cheese Of The Week: Cypress Grove Purple Haze

I've written about two Cypress Grove goat cheeses in this column already — the awe inspiring soft ripened Humboldt Fog (in my opinion one of the world's best cheeses), and the Gouda-Style Midnight Moon, which is actually made in the Netherlands to benefit from the local terroir.

Today we'll look at a simpler Cypress Grove offering: Purple Haze fresh chevre.

Fresh chevre is a very popular cheese in the United States these days, found crumbled over everything from salads to omelets to grilled meat.

To make it, goat milk is pasteurized, cultured with a special bacteria, coagulated with animal or vegetable rennet (Cypress Grove uses only vegetable rennet) and left to set overnight to curdle into a tangy mixture resembling yogurt.
