Cheese Of The Week: Cheese Sartori Bella Vitano Merlot

You've probably heard the name Sartori connected to cheese for most of your life.

The company's founder, Paolo Sartori, immigrated to the United States in 1939 and embarked on a venture his family continues to grow, evolve and improve nearly 75 years later.

Sartori was from a tiny town called Valdastico in the northern Italian Alps. He settled in Wisconsin's dairy country and within a year cofounded S&R Cheese Corp. with partner Louis Rossini.

The Sartori website lists an entire page of milestones for their family business. The first half records the leaps of a food manufacturing business booming in midcentury America:
