British Cheddar Looks Delicate But Offers Bold, Pungent Taste

Ilchester British Cheese is a maker of English cheddar, White Stilton and Wensleydale blended cheeses, located in the dairy country of Somerset, in southwestern England.

The British love their cheeses aged to attain bite, then ground and blended with various ingredients, from herbs and chilies to dried fruit, then packed back into a wheel shape for slicing. These blended cheeses are not like the flavored processed cheeses of the U.S., as no additional preservatives, gums or stabilizers are added.

Ilchester was created in 1962 when a pub owner discovered if he added beer to his cheese, it would last longer in his bar. Tubs of beer cheese became popular, teetotalers boycotted it, headlines were made and a new business was born.
