Baetje Farms' Miette Cheese

Every year seems to bring more accolades for Baetje Farms, Steve and Veronica Baetje's goat dairy near Ste. Genevieve, Mo. And now their repertoire includes cheese made from sheep's milk, including the new Miette, a sheep-goat combination. The soft-rind cheese has a creamy, runny-brie-like texture close to the surface and a cheesecake-like texture in the middle. It's rich enough that a couple of wedges should suffice, but the deep, mellow flavor made us want to eat the entire round.
