Sophie Starr, a landscaper, and her husband, Matt, moved from Berkeley to the village of Hartland, Vt., almost a decade ago. They bought a home in a new farm-based rural development called Cobb Hill, which bills itself as an "intentional community." They were the fifth household on Cobb Hill's 270 acres; now there are 23, all of them dedicated to sustainable living and to participating in the farm's various enterprises.
The property has a history as a dairy farm, and some of the original community members had Jersey cows, so it made sense for the community to think about how to market the Jersey milk. By the time the Starrs arrived in 2001, Cobb Hill had a small cheesemaking operation. Sophie decided she wanted to participate, and now, not quite a decade later, she is one of three cheesemakers responsible for Cobb Hill's two cheeses – Caerphilly and Ascutney Mountain.
