Pascoag, RI: Daniele Inc. has recently installed a state-of-the-art, innovative high-pressure pasteurization (HPP) machine that will ensure the safest quality of meats and extend the shelf life of the product. The 350-Liter HPP system from Avure Technologies utilizes extremely high water pressure (up to 87,000 pounds per square inch) to inactivate microorganisms and enzymes and destroy food pathogens. Since HPP doesn’t utilize heat, chemicals or preservatives, the flavor, texture, vitamins and nutritional characteristics of Daniele’s finely cured Italian meats are left untouched.
The third-generation, family-owned artisan processor operates three production facilities in Rhode Island. The company adheres to stringent international protocols for food safety and quality and has obtained the highest level of certification for Safe Quality Food (SQF) standards. The investment in HPP technology, unusual for a firm of its size, demonstrates Daniele’s unrivaled commitment to food safety.
According to Davide Dukcevich, Daniele, Vice President Sales and Marketing, “HPP technology is the best protection you can have. We already have a very rigorous food safety testing program; the investment in the HPP machine brings it to the next level.”
The addition of the newly acquired HPP system brings groundbreaking science to the ancient European art of charcuterie.
“Daniele is known to be one of the U.S.’s most authentic manufacturers of Italian-style dry cured meats,” comments Matt Rutherford, Avure Food Group Senior Vice President of Sales. “We have been delighted to be a partner with them on their journey to successful High Pressure Processed products. Their old-world artisanship combined with new technology adoption will help to ensure their success for many years to come.”
The new technology has the added benefit of keeping the artisan meats fresher longer—in many cases doubling shelf life over conventional chemical preservation methods. This wider selling window allows Daniele to extend the distribution chain and enter new geographic markets.
“HPP reinforces our ability to focus on bringing products from American farms to more American tables, with an emphasis on safety, quality and taste,” Dukcevich concludes.
About Daniele Foods:
Food, Family, Passion Deep in the unspoiled forests of New England, the Dukcevich family is hand-making some of the finest charcuterie in the world. More than three decades ago, the family brought their delicious salumi to America from Northern Italy. It all starts with the hogs, which are raised on American family farms. The pork is then dry-cured for months with basic ingredients like sea salt and coarse pepper, using the same ancient methods passed down through the centuries. Today, families all over the world enjoy our Del Duca® Prosciutto, sopressata, salame, pancetta, mortadella and capocollo.
About High Pressure Processing (HPP):
HPP is a non-thermal process that uses water under very high hydrostatic pressure (up to 6,000 bar, or 87,000 psi) to disable pathogens and bacteria such as Listeria, E.coli, and Salmonella in packaged refrigerated products like RTE meats, juices, fruit smoothies, soups, wet salads, sauces, seafood, and shellfish. It is recognized by governmental agencies around the world as a highly effective lethality process. Unlike heat applications, HPP has no negative impact on the nutrient value of foods.
About Avure Technologies Inc.:
With its equipment now processing the vast majority of all HPP-treated consumer food products worldwide, Avure is truly the global leader in HPP technology. The company offers a full range of services to keep food pathogen free and fresh longer—from recipe development to installation of the fastest, most reliable high pressure presses in the world. HPP significantly extends product shelf-life while preserving and enhancing natural flavors, colors, taste, and texture.
