The very fine, fatty rind serves as both a flavor enhancer and as a protective barrier to prevent the Black Forest ham from drying out too fast.

ADHERING TO THE HIGHEST STANDARDS

In a two year long process, ADLER had to address different modifications before bringing its Schinken to market in the U.S. The installation of additional safety locks and additional daily examinations by the Veterinary Inspection Office were required. In accordance with the American and European Food Defense regulations, the safety of the factory and the incoming goods inspections were modified. ADLER also established an advanced internal quality management and works with an external quality laboratory.
