Hummus has been consumed for centuries in the Middle East, but it's now so popular here that even Tony Aramouni is surprised.
Aramouni, 40, was born in Lebanon and began making hummus — a mixture of chickpeas, tahini, lemon and garlic — five years ago.
"Hummus is to the Lebanese what rice is to the Chinese," he says.
His Boca Raton company, Aramouni International, makes Nature's Healthy Gourmet hummus for all 16 Florida Whole Foods Markets. Aramouni makes other Middle Eastern foods, but hummus makes up 65 percent of his business.
