GOSHEN — Life with a new twist has come to a century-old dairy farm on the fringe of the Black Dirt.
Instead of milk, a product that in years past kept dozens of local farms humming and Erie trains running to distant markets, Alan Glustoff's 5 Spoke Creamery aims to produce artisan cheeses. The fruit of his labor, he promises, will be an old European flavor that gets lost in mass manufacturing.
"He's the only dairy cattle farmer in Orange County making cheese," said Jennifer Simpson, the Cornell Cooperative Extension's dairy and field crop community educator. "There are farms using goat milk, but his is the first dairy cattle farm."
