'Top-Loader' Buns Popularity Migrating From East Coast To Des Moines

Until recently, the world of hot dog buns here in Iowa has been fairly homogeneous and uncomplicated.

Yes, brands varied. Some buns are longer. Some are shorter. But, for the most part, all hot dog buns have looked identical — cut in the middle with puffy, crust-covered outsides.

That changed in August when Zombie Burger + Drink Lab opened in the East Village of downtown Des Moines. The new restaurant’s hot dogs — deep fried and called New Jersey Rippers on the menu — came in a bun with flat, white outsides.

The differently shaped bun looked familiar to me, a native of New England, and it probably looked familiar to anyone who has ever had a lobster roll on the East Coast.
