When Shaun Davis, pastry chef at Cotton Blues, makes his popular cheesecake recipe, he likes to channel his "inner grandmother." He's been internalizing Grandma a lot lately because he and his staff of five have been churning out 90 to 120 cheesecakes a day at the Hattiesburg restaurant.
"There's this feeling of holiday cheer," Davis, 26, said. "It's bringing a different level of happiness."
Davis has to find some way to stay positive as he blends ingredients, mixes up crust and bakes the cakes 10-11 hours a day.
