Rubschlager Baking Converting To 100% Whole Grain Formulation

Rubschlager Baking is proud to announce that it is completing the process of converting the company’s entire bread product line to a 100% Whole Grain formulation. In an effort to deliver wholesome, healthy, and good-for-you products, Rubschlager has reformulated the product line using whole wheat flour and whole rye flour without jeopardizing the original flavor or taste profiles.

All Rubschlager products will now carry the 100% Whole Grain stamp and a 100% Whole Grain “banner” has been added to the label highlighting the Whole Grain claim. The 100% Whole Grain stamp is allowed on products that contain no refined grain and at least 16 grams of whole grains (1 serving of whole grains). Federal Dietary Guidelines urge Americans to eat three servings or more of whole grains daily. Rubschlager breads range from 17 grams to 25 grams, depending on the serving size of the product. The Whole Grain Stamp is a quick and easy tool to help consumers find delicious whole grain foods. In addition to the 100% whole grain reformulation, all oil used in Rubschlager products is now canola oil, regarded by many experts as the healthiest of all oils.

The US bread industry is mature, with consumer preferences shifting from ‘normal’ to ‘healthy’ breads. Whole-grain breads are gaining in popularity and have added a new dynamic to the mature US bread industry. Consumer interest in whole grain products and in healthier eating has continued to grow. People are now looking for healthier breads which would be a part of a healthier marketplace. The FDA recently announced that products with greater than 51% whole grain by weight and low in fat can carry claims linking them to a lower risk of heart disease and certain cancers. “We are excited to be able to offer this healthy, new 100% Whole Grain formulation to our customers”, said company owner Paul Rubschlager.

Rubschlager Cocktail Bread products were converted to 100% Whole Grain in December 2009, while the balance of the items will be introduced as 100% Whole Grain during 2010.

About Rubschlager Baking

Fred Rubschlager founded Rubschlager Baking Corporation in Chicago in 1913 as a neighborhood, full-line bakery called Rubschlager Brothers Bakery. Rubschlager is still a family-owned business, located in Chicago, Illinois, with distribution throughout the United States, Canada, and Mexico for its bread products. Paul and Joan Rubschlager, specialty food industry icons, have been operating the company since 1960.

Rubschlager is best known for their Cocktail Breads, now available in four 100% whole grain varieties; Rye, Pumpernickel, Whole Grain and Sour Dough. These famous cocktail breads are perfect for making wonderful appetizers and delicious mini sandwiches. Recipes for classics such as Mini Rueben’s, Cucumber Tea Sandwiches and Cheesy Patty Melts can be found on the official Rubschlager Baking company website http://www.RubschlagerBaking.com.

Rubschlager Baking also produces a quality line of European-style breads in styles known as “Squares” and “Rye-Olas.” The Squares, dense and fairly smooth in texture, are available in seven varieties. The Rye-Olas are a group of three breads made with 100% chopped, whole rye, in a style usually produced only in Northern Europe.

A successful addition to the Rubschlager line-up is the Toasted Mini-Chip. These delicious snacks are all natural and packed with flavor. Each mini chip is baked, thinly sliced and toasted for a super crunch. The mini chips are available in Really Rye, Really Garlic and Not Really Plain varieties, each lightly flavored with just the right amount of natural sea salt. These low fat, all-natural mini chips are perfect for dips, salsa, soups salads and snacks.

Additionally, the company produces both pre-wrapped and bulk dinner and sandwich rolls, giant (ten-pound) loaves, sandwich breads, and a group of half-loaf Cocktail breads in controlled atmosphere packaging for use in the gift basket business.
