You probably haven't heard a shot, or seen a skirmish, but the first battles over the metro area's bagel future are already being waged.
The sides are already set. Bowery Bagels' brick-and-mortar location should open this month. Spielman Coffee Roasters and Tastebud have considered expanding production.
Yet behind the scenes, Kenny & Zuke's Delicatessen has perhaps been more active than all of them in filling the boiled-bagel void left by last year's sale of Kettleman Bagel Co.
Ken Gordon — the Ken in Kenny & Zuke's — has already negotiated bagel accounts with area Whole Foods stores and with Sheridan Fruit Company. Now, The Oregonian has learned, Gordon plans to open a brick-and-mortar bagel shop, Bagelworks, in the current home of Kenny & Zuke's second location, Northwest Portland's Sandwichworks.
