Plano Test Kitchen Aims To Be The Hot Spot For Global Baking Innovations On The Rise

Show and tell last week at Plano's Middleby Bakery Group centered on truck-sized baking equipment churning out diet-busting sweets at almost the speed of sound. 

This month, the maker of equipment for the commercial baking industry launched a new Bakery Innovation Center, inside its Plano warehouse. The collection of machines, many made by Middleby, work together to automate baking in a way unimaginable to the Keebler elves. 

The $2.3 million center will serve as a test kitchen, allowing commercial bakers who have been testing new products in small batches, to ramp up production and see what tweaks are needed when the muffins, buns or breads roll out at a rate of four tons an hour.
