New Hampshire Bakery Making A Dent In Gluten-Free Market

CONWAY — A baking enthusiast since the age of 9, Peace of Mind Baking Co. proprietor Nancy Plante started her gluten-free and vegan bakery in her home kitchen in North Conway in 2007.

She supplied muffins to North Conway businesses like the Frontside Grind and the Local Grocer.

Both she and son, Wyatt Arriaga, 13, suffer from food allergies. She has celiac disease, an intolerance to gluten, which is found in wheat, rye, barley and possibly oats.

At age 4, Wyatt was diagnosed with severe dairy allergies and gluten intolerance. He does not have celiac but carries a gene that could lead to celiac.
