San Francisco-based Marlo’s Bakeshop just released a third flavor in its line of soft baked biscotti, originally inspired by a very secret family recipe.
“After five decades my grandmother finally passed down this twice-baked cookie recipe when she got tired of stirring,” says owner, Marlo Gertz. “I saw an opportunity to share this wonderfully addictive cookie with the world and jumped on that chance.”
Based on feedback Gertz received at artisan fairs, markets & doing demos, Gertz knew she had to create a gluten-free version of the beloved treat. “When every 4th person is asking for a gluten-free product, you have to listen to them.” Recognizing that living a gluten-free lifestyle is a growing trend that is here to stay (*researchers predict the market for gluten-free products will hit $15.6 billion by 2016), Gertz went back to the kitchen to develop a gluten-free flavor of her soft baked biscotti that would taste good…”not just ‘good’ for being gluten-free”.
To determine the flavor combination that consumers most wanted to eat, Gertz tapped into modern technology and e-surveyed her customers and fan base. “They helped us narrow it down to three different flavors and after creating a test batch with each of those three we decided to pursue the Banana Bread flavor.” Because who doesn’t love the taste of freshly baked banana bread?
