It took two years and $1 million in renovations and new equipment, but The Cookie Factory finally opened its new commercial bakery in Troy, New York — a huge step for the growing business owned by brothers Chris and Joe Alberino.
The move from the small, cramped bakery in the rear of the retail store at 520 Congress St. into the large, roomy bakery at 41-61 River St. — a former meat processing plant near Russell Sage College — happened last week.
"It was exhausting but we managed it," said Chris Alberino, president. "We shut off the ovens Sunday at 10 a.m. and we had them back on at 3 p.m. Monday [in the new building]. There were a couple of hiccups, but we managed."
