NORTH JERSEY — There’s "Ace of Cakes," "Cupcake Wars," and "The Cake Boss," to name but a few. It seems like everywhere you turn there’s another show about cakes or cupcakes and the bakers who make them.
But when you’re looking for baked goods in reality, it’s a different story. The number of independent bakeries in the United States has gone down from 30,000 40 years ago to about 6,000 today, according to the Retail Bakers of America.
It’s certainly not that Americans are disenfranchised with our baked goods. Rather, supermarkets and wholesale chains have gotten in on the act and claimed a huge share of the market.
So while once upon a time, people went to the corner baker for a crumb cake fresh from the oven or a loaf of crusty bread that was still warm, today, more and more people fill their baking needs at their local grocery store, while also picking up a gallon of milk and a dozen eggs.
