ATLANTIC CITY — Bakers of every stripe came to the city’s Convention Center on Sunday for the start of the Atlantic Bakery Expo 2012, celebrating an industry that has struggled in recent decades.
“Years ago, there was a baker in every neighborhood and now you have a bakery in every supermarket,” said George Delaney, president of the New Jersey Bakers Board of Trade, which has held the event here every two years since 1984.
But the industry has slowly rebounded in recent years, Delaney said, in large part due to retailers that specialize in certain foods — such as cookies or cupcakes — or also offer deli meats and cheeses. This year is the first time the expo also incorporated foods once considered the sole domain of delis, he said.
