Long-term planning for major upgrades and renovations to the Baking Science and Technology course laid the groundwork for what is now the active stage of an extensive renovation of the course curriculum, content, delivery, and assessments.
Last year, a team of curriculum managers, subject matter experts, technical writers, graphic designers, and instructional designers began redesigning the BS&T course curriculum to align content and instruction with current and emerging industry needs. The team has renovated sections of the bread and cookie and cracker materials.
“Authentic assessments play a big role in the redesign of the materials,” Aaron Clanton, Global Manager, Standards and Calibration explained. Authentic assessments are a form of evaluation wherein learners are asked to perform real-world tasks (or closely related simulations) to demonstrate their ability to apply knowledge and skills.
