It's probably safe to say that Jennifer Rubell spends more time thinking about food than the rest of us spend eating it.
By profession, she’s a conceptual food artist. By day, she’s the Vegetable Butcher at the new mega-luxe grocery store Eataly, in the
Flatiron District.
“I think I’m the only vegetable butcher in the country,” Rubell, 40, tells The Post while slicing radishes.
She and Mario Batali, an owner of the Italian food emporium, which opened last month, came up with her strange job over a few drinks at his restaurant Del Posto. The two met 12 years ago when she interned for his show “Molto Mario” at the Food Network.
