UNL Dairy Store To Give Free Samples Of Probiotic Frozen Yogurt

University of Nebraska-Lincoln researchers at the Food Processing Center and Department of Food Science and Technology have developed a probiotic soft-serve frozen yogurt, and the UNL Dairy Store will offer free samples Wednesday, 11:30 a.m.-12:30 p.m.

Scientific evidence suggests that eating probiotics — live microorganisms often referred to as "good" bacteria with health-promoting benefits — can decrease intestinal difficulties.

UNL researchers worked with Nebraska Cultures Inc. to determine the optimal probiotic strains. Founded by former UNL Professor Dr. Khem Shahani, the private company researches and manufactures probiotic ingredients. Shahani discovered the DDS-1 strain in the late 1950s and named it for the UNL Department of Dairy Science, Number One strain.
