The availability of Canadian lamb has improved over the years. Once found only at the farm gate or specialty butcher shop, it's now available at the supermarket.

Fresh lamb still doesn't fill up the amount of cooler space that beef, chicken or pork do. That's because many home cooks regard lamb with the same trepidation as they do fish. They would like to cook it, but are not sure how, so they don't buy any.
