Jessica Scarola, owner of the Elegant Elephant Baking Co. in Eugene, often jokes with her husband, Evan, and her parents about the amazing reality that she is a full-time baker, making gluten-free products that could pass for traditional wheat flour-based baked goods you might find anywhere.
“Did we know I had such a work ethic?” she quips. “I don’t think we did. But now it’s shining and it’s indicative of the fact that I really love what I’m doing.”
In a commissary kitchen she rents from Hummingbird Wholesale, Scarola and her staff of 13 employees roll out the dough for an impressive lineup of baked goods, sold wholesale and stocked in various local food stores; at Lane County Farmers’ Market in season; and also from 10 a.m. to 2 p.m. Tuesday through Friday at her food truck parked in the west lot at the Hummingbird site.
