What's In Store 2017 – Health Drives Cheese Purchases

Madison, WI — Health has become a key purchase driver of cheese, as consumers are increasingly seeking out its high protein content and simple, clean ingredients. This is one of hundreds of findings in What’s in Store 2017, the latest edition of the annual trends publication from the International Dairy Deli Bakery Association™ (IDDBA), and What’s in Store Online, a collection of over 150 downloadable graphs and tables, as well as links to white papers and trends articles.

Other findings in the book’s “Cheese Sales & Retail Trends” chapter include:

  • Consumer perceptions on dairy fat are changing—more shoppers are seeking real foods not made from processed ingredients. Overall, sales of whole-fat cheese are growing while sales of low-fat, reduced-fat, and fat-free are declining.
  • Authenticity and local-sourcing are especially important among Millennials—61% are wanting more local cheese available at their store and 61% would pay more for it.
  • Hispanic varieties of cheese like queso fresco, queso quesadilla, and cotija are growing faster than the cheese category overall.
