About Vanessa Musi
In 2001 she received a scholarship at CAC Maricu, the best pastry school in Mexico, where she worked her way up to having her own workshops and classes where her love of teaching began. In 2011 she was accepted to the French Pastry School in Chicago. She almost didn't make it to classes based on a serious health scare. She was hypoglycemic and based on her busy work schedule and profession she became pre-diabetic. This scare almost forced her to give up her career but she persevered, attended the French Pastry School and graduated with honors.
She has now turned the baking and pastry world on its head by finding ways to reinvent traditional recipes that are high in sugar, calories and gluten with innovative ingredients. By evolving her belief in all natural ingredients now everyone can enjoy her yummy baking and pastries even for those with health conditions such as diabetes, hypoglycemia and gluten intolerance.
Based on these conditions becoming more prevalent in the US, falling in love with her husband and moving to his hometown of Austin, TX, she is growing her avid following from 100's of thousands in Mexico and Latin America to the US.
She has helped professional and avid bakers around the world with her high demand master classes and webinars along with consulting Starbucks, Whole Foods and The Natural Epicurean.
